looking at ATs.

Depends on the make of tyre, for example BFG give rim width range of 6 to 7.5 inch on the specs for their AT http://www.bfgoodrichtires.com/specs/all-terrain-t-a-ko/44.html

So you will need to find out what other manufacturers specify

Range Rover Blues:
I'd say you were fine, 235 mm on an 8 inch rim, 8 inches is 203.2mm so still a little over-tyred in fact but you would notice the steerig being a little more positive.

Disco-Ron:
I personally think it depends on the tyres.... cos mine are currently 235 85/16 insa turbo sahara's, but the tread width only measures 205mm..... they are on 7 inch rims, if they were on 8's they would be too narrow.....

I'm in the process of deciding what tyres to get for my Disco, i'm tossing it over between 265 75/16's, or maybe even 285 75/16's.... either on 8inch modulars....!!

Ps, i do have big arches, and lots of metal cut away.....

Range Rover Blues:
But that's what the number means, it's the width of the tyre at the root of the tread, if it isn't something is wrong.  the second number is the aspect ratio and the third is quite obviously the rim diameter.

smith335:
so because my alloys are 8 inch fitted with 255/65/16

and i wanted to go to Ats (BFGs or goodyear ATRs) and i havnt seen them in 255/65/16 only 235/70/16 , would i be better going for 7 inch rims.

like range rover blues said the steering would be more positive with the 235s ,and would i be right in thinking that there would be less rolling resistance, thus meaning slightly more mpg?

thanks for your help so far.
