if gimp uses the history stages like photoshop then......

do your levels and basic cleaning up, desaturate, set history brush, roll back to the pre-desaturated stage and using the history brush "convert" areas you want to desaturate. Combining this with levels adjustment and colour replace would probably sort the colour on the roof. Alternatively you could change where you set the history brush and paint colour back in! There's probably a way to do this through duplicate layers and masks too.

How's about this one?

I put the photo into grey scale, applied a light sketch effect to it then added some tint. Easy to produce on Adobe PhotoDeluxe Home Editor and I think it gives a nice, old looking, reproduction.  :D
