How do I disable the engine??????

That's why having an engine that will start only to cut out irretrrievably a short time later works so well, the thieving pikey will have drawn attantion to himself and sitting in the middle of the road grinding away at the starter only makes him feel more conspicuous. I've had several mates who have found their cars a few yards down the road in the morning and it's always something simple but not obvious that saves the day.
Then there's always a Discloc and pedal lock or a wheelclamp.

If it's a diesel, consider putting a cut-off switch into the fuel solenoid, this would pretty much stop it from running since that's how they stop in the first place :)

disconnect the throttle linkage ?
open up the air intake box and wedge a potato in before the intercooler.
