Anybody in the catering trade?

After a good 8 years of use my Tescos £8.99 set of kitchen knives are starting to go blunt despite sterling service, and because they're serrated and have a surface finish, they won't really sharpen up using a steel.

Can anybody recommend a decent set of knives which will last well and take a decent edge?  There's a huge choice out there and tbh without trying them out I couldn't tell a decent set from a rubbish lot.

Thanks, David

I use Sabatier knives, yes they're French, but well made, well balanced, and do keep a good edge - and when freshly sharpened will easily take your arm off !

Sabatier for me too, can't get better (& I'm from Sheffield  )
Also got a couple of Richardson knives which I quite like, they're nowhere near as hard as the Sabatier so they need sharpening more often (which isn't really much of a problem). The main thing is to get a knife with a blade that don't bend.
