Title: 2003 TD5 110 Servicing

Want to do all the filters oil etc, and rear pads/disks, anything i need to look out for eg Electronic sensors etc, dont want to trip anything etc.

I am just about to do the same thing.

I have looked at loads of stuff on the web and found an old copy of LRO with a servicing you TD5 article. It did not mention anything about sensors.
It did mention that the TD5 has 2 oil filters, one is a centrialfugal filter and one is a traditional filter.
I did not think Defenders had pad wear sensors fitted but even if yours does, I have changed many car pads that do have sensors and you just unplug the old pads and plug in the new.

Does your Defender have ABS and Traction control ?
if it does you will find a sensor on the hub, as long as you don't damage it you wont have any problems.

watch out when doing the centrifugal filter as 1 of the bolts always snaps, apparentley (never changed one myself)

Not so much snapping but stripping of the threads when over tightning. Apart from that simples
