Has anyone done this? Would love to see a pic but cant find one anywhere.

So can you translate that to a recognisable tyre size?
??x??x15"

I don't think it could be done (barring hybrids). A tyre size calculator shows 265/75 R16s as having approximately 30" diameter and that's far bigger than could be fitted to a Freelander.

Not even with a lift and body trimming?

The inner arches are going to be the problem. They are barely larger than the outer arch. And the plastic arch 'trims' are likely to make it difficult to do a need cutting job.
Realistically, 2" is the maximum lift you can achieve on a Freebie.

mine are 215 x 80 on 15's and I went on the calculator/table that is posted in this thread (http://www.mud-club.com/forum/index.php/topic,67697.msg574734.html#msg574734)
No rubbing at all on full lock and nothing done, yet gave me enough of a lift to do the final corner at Abingdon this year and many of the hard parts where normally a freebie would struggle with the lowish clearance. Mine are Falkens and I had planned to just have them on the car for event weekends. I'm now in the market for a fifth 15" steel wheel as I've been that pleased with them.
