P38 diesel 2.5 (bmw) coughing and spluttering!!!

Well, here is the latest in the saga of dysfunctional cars!!
We have just returned from our fantastic summer holiday down to sunny Cornwall. We have a very nice P38, 2.5 diesel (bmw), towing our caravan. Along the way, we noticed that the temperature gauge started to rise when going up a hill. It soon went back to normal on the flat, but we had the needle right over towards the red at one stage, at a notorious hill on the A30.
Do the two electric fans at the front of the engine, kick in when the engine is hot, or do they just cool the aircon?
Answers on a postcard please!!
Also, we appear to have the hot start problem too, and the engine splutters a fair bit after starting up, whilst the engine is still warm. When starting from cold, it doesnt splutter at all. Is this normal?? What can we do about it??
Any replies are greatly appreciated at this stage.

Only on the V8, the condensor fans on the DSE are only controlled by the AC gas pressure

the AC fans don't come on when the engine is hot (overheating) on my mates V8 P38. only when you switch on the air con.

thanks for the responces, i think i will be wiring up the fans to a switch
