put the same as what came off. i would personally go for the elring type of gasket not the multi layer type they now seem to be suplying. only my opinion though. as far as skimming or checking it aint a bad idea depends how and where the gasket had gone . i have in the past used a spirit level as a straight edge and shone a light behind it to see the distortion or use feeler guages . iff you rubb the head down use a block of somesort use wet and dry a bit of wd and dont go to mad ally is soft ..i dont know where your gasket has blown 300 blow out no 4 to atmosphere but iff you look you should see where it has blown through either on the gasket or cyl head . just pay a little more attention to that particular area ..alan

Iv recently done mine, and like others have said its not to hard. 
The one things i would say which has been mentioned before is you will defo need two people to get the head off and on and i don't know how you would do the two 60 degree (and the 20 degree on the middle bolts) tightening ups without a snap on digital torque wrench as the dial gauge would be nearly impossible to use on the bolts nearest to the bulkhead IMO?!
I went for a 3 hole as my head was banana shaped so iv had to have it skimmed.

I'm not being cheeky, but why twice?   I ask because I'm about to do the same car for a third time, it had a new head and genuine gasket last time, plus new bolts etc.
