Second thing, if i put bench seats in the back, do i need to declare this to insurance and relevant authorities? Also, what is the procedure for telling them about an engine change and a respray?

Yes, tell your insurance company everything, if you fit seats you will need belts for the MOT, and bench seats arent the greatest and safest for kids, secondly respray and engine, fill in the changeso n the v5 and send it to the dvla.
