Given the upper speed limit is 70, how much should i worry about speed ratings?

Apparently my proposed new car comes on road biased h rated tyres, i want to put some at's on, but in an appropriate size that will fit, the highest ratings i can find are Bfg's at s rating and good as they are they are expensive, less expensive tyres are p or q rated at best.
 
So how vital is it all?

As far as I understand it, you may give your insurance company reason to refuse a claim if you fit underrated tyres to your vehicle.

You can fit what you like provided you insurance company know about it.

 In Europe the speed rating of your tyres must be capable of handling the top speed (as quoted) of your vehicle.
 However, in the UK, you must not drive at a speed that exceeds the speed rating of your tyres.

 So, check your tyres if going to Europe!!

They are for a non-turbo forester so i doubt it will get to 110+ mph even should i want to!
