Have you ever seen how these things work?  If you had you wouoldn't be too worried about accuracy!  The important thing is to check for deviations from the normal reading you get, this indicates a problem developing.  The only way to accurately check the coolant temp is by using a thermometer.

my old 200tdi used to sit between half and 3/4 before i found out the wrong thermostat was fitted , when i fitted the correct one it used to sit smack on half day in day out regardless of how hard it was driven
