Depends what V8.  I'll assume you're talking about the Buick derived Rover V8.  The Rover V8 was produced in 3.5, 3.9, 4.0 (same crank and bore as 3.9 but different heads), 4.2, and finally 4.6 Litre formats for various Land Rover products.

The 3.5 Litre came in two setups, low compression and high compression.  High comp engines produce 140+bhp and 170+lb/ft torque.  Fuel consumption is very similar if not better than the 2.25 Litre Petrol, but this is at the cost of not having the same "multi-fuel" capabilities that the 2.25 Litre Petrol has (although in the UK this isn't an issue).

In an 88-inch, the 2.25 Petrol will give 15-20mpg typically when being driven light footed.  The 3.5 Litre High Compression Rover V8 on carbs in the same vehicle would likely return 20-25mpg.

The Rover V8 is a lot less tolerant of water too, when compared to the 2.25 Litre Petrol.  This I believe is largely down to the fact that the distributor on the Rover V8 is at the front, just behind where normally the fan is located and as such it can often get soaked by water if the fan is operating and is partially submerged.

water= no probs so longs as your not stupid
mpg= dont know, but its not alot.
