Did you use a thicker head gasket?

they come in 3 thicknesses, which are indicated by 1,2 or 3 small holes. to thin a gasket would mean higher compression and maybe too much for the gasket (not to mention the possibility of valves hitting the piston). The heads are specially hardened and land rover don't recommend skimming. It may be that your head keeps warping as it has gone 'soft' due to being overheated at some point. You may need to get a hardness test done.

When I had my head gasket done it was given a light skim and moved up a size on the gasket. It also passed the pressure test and so far has been fine (touches wood!) and that was about 3 months ago!

I hope you don't need a head as the raw materials are £350 plus!
