newbie quick jeep question

quick help what temperature should my 4.0 xj 1997 ltd run at

on the temp gauge mine reads around the 100 mark

cold start 0

open road very gently around 98 after 5-10 mins say

open road overtaking  around 100-102
 
in town traffic i get nearly 102 upwards fan only kicks in at 104 issh

the other day hooked upto horse box iforwilliams towed it for ten miles 5 each way to the tip and back

on the way back i split a hose going up hill at 50-60 the temp gage went up to 104-105 then steam rad pipe split is this normal (not the pipe but the temp) any one got any sugestions new pipe comes tomorow just bolt it on and fill it up with anti freeze or more complicated ??
