The flowers were used to try & purify the air around an infected person, as it was believed that the smell was part of the problem

Which has parrallels with the Typhoid/Cholera epidemics of the mid-1800's that led to Joseph Bazalgette designing the London sewerage system
(& also saw Doctor John Snow founding the science of Epidemiology)
