Have you seen the Mech Lock from Mud Stuff? It stops the hydraulics to the clutch pedal so once you've removed the key from it, the next time the clutch pedal is depressed, it stays down and therefore you can't engage gear. Much better explanation on their website. Pretty expensive but may be worth a go.

Seems to me that storage for the back of a pickup is being cashed in on - I'm no fabricator myself but some of these products are a hell of a lot of money for what they are, until you get to the much heavier duty ones...
