EFI systems 'in working order' will give better performance, emissions and econamy than carbs. Carbs can be pritty good but require a lot of time and effort to set up just right.
I presume you want to chuck the EFI because of reliability issues, in which case have you thought about fitting a different EFI system?
There are a lot of people building kit cars and converting them from carb to EFI, one of the cheapest and simplest systems used is called mega squirt. Mega squirt is not the last word in performance EFI, but from what i've heard its cheap, effective, and reliable.

If the EFi is working, why change? Plug and play, no fiddling. If you are after more performance there are still many options available with the ECU route.
Which have you got 3.5, 3.9, bigger?
If its a 3.5 then probably the cheapest performance upgrade would be to swap it for a 3.9!
