We could be moving to Scotland... now what???

Edinburgh is a wonderful city and there are a fair number of Landies and Landy people here.
Housing is pretty expensive in the city, most houses are owner occupier, the best site to give you an idea of what is available is:

Setting up in businessis pretty easy here you can set up as a sole trader with no real formalities just keep all the accounts in order you have to submit tax accounts on the basis of your trading year to the Inland Revenue. If you plan to make a lot of money, something like £40,000 a year you should register for VAT then you charge VAT on invoices and gettit back on business purchases, sorry not the cars though! If you are heading for the big time you can set up a Limited Company through a service or a solicitor again not expensive , a few hundred pounds, though a bit more work for accountants every year.
There are lots of computer based businesses here so you should be able to get work or set up on your own serving the small and medium business sector, shame you are not into Macs, there is a big gap for technical support for the Mac community.

Can't you maintain your current company registration in Holland? I thought the EU meant you can do things like this now.
If not a decent accountant can set up the company in no time at all. There are a few pieces of paperwork needed, but it should not trouble you. The accountant should be quite cheap and take care of it all for you.
